Pre-heat oven to 400 Degrees        Makes about 10 Muffins


1 Cup drained crushed pineapple (save the syrup)

1 in a half cup. “Bisquick” (packaged biscuit mix)

3 Tablespoons and 1 Tablespoon granulated sugar

1 Beaten egg

Step #1: Drain pineapple syrup and pour into liquid measuring cup.

Step #2 Add just enough milk to syrup to make 3/4 cup of liquid.

Step #3: In a large mixing bowl combine “Bisquick” biscuit mix and 3 Tablespoons sugar.

Step #4: In a small mixing bowl combine beaten egg, the syrup/milk mixture, and 1/4 cup of the pineapple.

Step #5: Pour above mixture into “Bisquick” and stir with fork (should be lumpy).

Step #6: Pour batter into greased muffin liners 2/3 full.

Step #7: In a small mixing bowl combine remaining pineapple and 1 tablespoon of sugar.

Step #8: Spoon 1 tablespoon of the above pineapple mixture onto batter in muffin cups and bake for 20-25 minutes at  400 Degrees.
